Hourly Rate: $20.60/hour and $2,000 Sign On Bonus
Job Responsibilities:
As directed, assist cooks and supervisors in performing a variety of tasks concerned with the preparation and serving of food and beverages. Works under the supervision of the kitchen supervisor. The Cook supervisor will act independently or assist in the performance of any and all duties necessary to keep the facility in full operation.
Works under the supervision of the food service manager. The Food Service Supervisor will assist in the performance of any and all duties as directed by the food service manager.
The duties listed below are not set forth for purposes of limiting the various duties normally performed by individuals assigned to the Food Service Department or those to be performed temporarily outside the normal line of work.
Seasons and cooks all cuts of various meats, fish, and poultry.
Boils, steams, or fries vegetables.
Makes gravies, soups, sauces, roasts, meat pies, fricassees, casseroles and stews.
Oversees subordinate staff in the preparation of meals, insuring that adequate and satisfactory foods are produced.
Provides proper training and direction for detainee and civilian staff on the proper use and maintenance of food service equipment, sanitation, and kitchen procedures, food requisitioning procedures and food preparation methods as directed by the Food Manager.
Maintains all daily production, sanitation sheets and applicable forms to ensure all procedures are adhered to.
Oversees or prepares special foods for detainees requiring special diets.
Oversees implemented cooking schedule to assure food is ready at prescribed times.
Ensures delivery of food to detention areas at prescribed times.
Draws required cooking utensils from kitchen storage areas.
Monitors daily operations in food productions for conformance to establish quality, quantity, safety and sanitation requirements.
Reviews menus to determine type and quantity of food to be prepared.
Loads and unloads delivery trucks as necessary.
Mixes ingredients according to specifications to form dough and batters.
Places pans, molds, or sheets in oven and adjusts oven temperature and observes condition of products during baking.
Applies glaze, icing or other toppings to baked goods, such as cakes, pastries, and doughnuts.
Work is completed in a priority established by supervision or facility need and other duties may be assigned as directed. All work will be completed with a high degree of integrity and professionalism.

Minimum Qualifications:
Three years of experience in large scale cooking and/or supervising preferred.
High School Diploma or equivalent.
Must have a current DHS ICE Security Clearance
Must lift or push up to 50 lbs. For extended periods of time may be required to stand, walk, squat, kneel, sit, bend, reach, and climb.
Must have inter/intra communication skills with employees and Department heads.
Must be able to stand, sit, bend, reach for extended periods of time.
Work Environment:
- Work areas may include all areas of the facility. May be exposed to cleaning chemicals and solvents. May work in close proximity to steam or gas ovens that produce intense heat.
